Winemaking - Biodynamic, Organic and Method Ancestral. Grapes are chilled then pressed. Spontaneous fermentation begins in stainless steel and then finishes in the bottle. Aged on lees in bottle for 18 months

What it tastes Like - Aromas of raspberries, strawberries, lemon, some cherry, accompanied by a touch of hay. The palate is big red berries and tart cherry, and manages to be bright, dry and juicy all at the same time.
