Winemaking - Primary fermentation on the skins, two weeks. Temperature 28-30 degrees Celsius. Malolactic in tank, older barrels 15 months. No fining, one filtration pre bottling.
What it tastes like - South Africa's own grape, Pinotage, here full of black plum and black cherry, with a scattering of spice and a whiff of fynbos, the native South African vegetation.
