Winemaking - 100% Destemming and crushing, 15 to 20 days of maceration with a temperature control.
What it tastes like - Fragrant and generous with notes of freshly picked wild herbs, ground pepper, black fruits and liquorice. In the mouth the wine retains a delicious freshness, layered woodland fruits, garrigue, herbs and gently peppery spice, all backed by a fine tannic frame.
