WHAT IT TASTES LIKE: Strong notes of vanilla and subtle sweetness, which give way to a salty, tangy, buttermilk finish.
WHERE IT COMES FROM: Cashel Blue has been produced at Beechmount Farm, near Fethard, County Tipperary, for more than 30 years since Jane and Louis Grubb started experimenting with cheese making. Cashel Blue is hand-made from the gently pasteurised milk of the farm’s own herd of cows. This semi-soft mildly blue-veined and slightly acidic cheese won a gold medal at the International Cheese Awards in 2017, as well as a gold for the second year in a row at the World Cheese Awards.
