Unpasteurised cow’s milk
Creamy, smooth, soft and soft-ripened
WHAT IT TASTES LIKE: Brie-style rich, substantial paste, creamy on the outside to almost chalky within, buttery, mushroomy.
WHERE IT COMES FROM: Makers Jonny and Dulcie Crickmore at Fen Farm Dairy, in Bungay, Suffolk, are passionate about organic farming and sustainability and the milk comes from their own hand-picked herd of Montbéliarde cows, the same breed used to make the renowned Comté and Vacherin Mont d'Or in France. Baron Bigod is the only raw milk Brie-style cheese being produced in the UK today.
