Greco from the same vineyard as T’ara rà, planted at elevation in Santa Paolina. This spent eleven months on its skins in small terracotta amphorae, before being pressed off to acacia and chestnut casks to rest for a further six months. A deep, hazy shade of amber, this is heavily spiced with firm tannins and would be wonderful alongside some Irpinia’s more rustic dishes, such as rabbit braised with olives, wild herbs and wine.
