Winemaking - A minimalist work in term of wine making. The maceration is gently managed around 25°C, 1 or 2 pump over a day. After 10 days the tank is emptying, and presses are separate to avoid any bacterial contamination. The wine is stored in a full tank for malolactic fermentation.
What it tastes Like - Lively, elegant southern French red, brimming with forest fruits - blackberries, raspberries - and freshened by a gentle redcurrant acidity
